Amber’s Zucchini Boats

Makes: 4-6 servings

  • 2 small, or 1 large (roughly 12+ inches long, 4-5 inches wide), cut in half length-wise and remove the seeds
  • 1 pound browned ground hamburger (more or less to taste)
  • 1 c. frozen corn
  • 1 green pepper, diced
  • 1 medium tomato, diced
  • 1 c. baby carrots, chopped
  • butter
  • salt and pepper
  • shredded cheese, of your choice

Put a nice layer of hamburger in bottom of zucchini halves. Lightly salt and pepper. Place a thin layer of frozen corn, green pepper, tomato, and carrots on top of hamburger until zucchini is as full as desired. Salt and pepper once more. Add slices of butter, to taste, over top of vegetables.

Bake for an hour and half at 350ºF, or until zucchini is tender. You may need to put foil over top after a while to keep the zucchini from drying out along the edges.

About 5 minutes before the boats are ready to come out of the oven, remove foil (if applied) and sprinkle cheese on top. Return to oven for remaining time or until cheese is melted. Serve immediately.

Note: Ingredients are approximate. You can add more or less of any ingredient to fill the boats.
