Broccoli Cheese Soup

  • 1/4 c. onion
  • 1/4 c. butter
  • 1/4 c. flour
  • 1/4 t. salt
  • 1/4 t. pepper
  • 3/4 c. chicken broth
  • 1-1/2 c. milk
  • 1 c. cooked broccoli
  • 1/2 c. shredded cheese

Saute onion and butter until onion is cooked. Stir in flour and spices. Cook and stir until smooth and bubbly. Add broth and milk. Cook until the soup boils and thickens. Remove from heat and stir in the cheese. Simmer until heated through--being careful not to let it burn.
