Summer Veggie Salad

Makes: 12-14 servings

  • 3 c. cauliflower
  • 3 c. broccoli
  • 1 green pepper, sliced very thin
  • 1 c. sliced red onion
  • 1 c. sliced fresh mushrooms, optional

Dressing:

  • 1/4 c. olive or canola oil
  • 4 1/2 t. cider or red vinegar
  • 4 1/2 t. lemon juice
  • 1 t. salt
  • 1/2 t. dried basil
  • 1/2 t. sugar
  • 1/8 t. cayenne pepper

In a large bowl, combine the cauliflower, broccoli, peppers, onion and mushrooms, if desired. Combine dressing ingredients in a jar with a tight-fitting lid; shake well. Pour over vegetables and toss to coat. Refrigerate until served.
