Chicken Caesar Salad

- 1 - 1-1/2 heads lettuce, depending on type and size
- 1-2 boneless skinless chicken breasts, chopped
- garlic salt
- Italian seasoning
- 1/3-1/2 c. parmesan cheese
- croutons (recipe at bottom of page)
- 1/3-2/3 jar caesar dressing (Lighthouse and Safeway Select brands have been my favorites thus far)
Place chopped chicken in a hot, oiled frying pan and sprinkle liberally with garlic salt and Italian seasoning. Flip and season again. Cook until just done, remove from heat and let cool awhile.
Wash and chop lettuce and place in large bowl. Add parmesan and dressing (as desired) and toss until evenly coated. Add cooled chicked and croutons, toss and serve immediately.

Croutons
Preheat oven to 300ºF. Chop bread into 1/2-in. cubes. Place in single layer on cookie sheet and spray with pan spray. Sprinkle liberally with garlic salt and italian seasoning. Flip bread; spray and season again. Bake 20-30 minutes or until crunchy.
Tip: You can use a little oil or melted butter instead of pan spray by mixing ingredients in a bowl or placing them in a freezer bag and shaking until evenly coated.
