Best Ever German Potato Salad
Makes: n/a
- 4 slices bacon; cut cross-wise in 1/4-inch slices before cooking.
- 1 small onion; diced
- 1 T. flour
- 2 T. sugar
- 3-4 potatoes; boiled and sliced (peeling optional)
- 1/2 c. water
- 1/4 c. vinegar
- salt and pepper to taste
- 2 eggs; hard-boiled, halved, and sliced
Fry bacon and onion until bacon is crispy and onion is translucent. Remove from skillet. Mix together and add to bacon fat: sugar, flour, water, vinegar. Salt and pepper to taste. Stir gently until thick and flour is cooked. Add to cooked, sliced potatoes and eggs. Serve warm.
