Skillet Lasagna

Makes: 6 servings

  • 1 lb. ground beef
  • 2 T. butter or margarine
  • 1 envelope spaghetti sauce mix
  • 1 lb. creamed cottage cheese
  • 3 c. broad noodles (uncooked)
  • 1 can (1 lb.) tomatoes
  • 1 can (8 oz.) tomato sauce
  • 8 oz. mozzarella cheese, sliced
  • 2 basil leaves
  • 1 T. parsley flakes
  • 1 t. salt

Cook meat with the butter in a 12-in. skillet until it is no longer red. Sprinkle with half the spaghetti sauce mix; then, spoon cottage cheese over meat.

Top with noodles in a layer and sprinkle with remaining spaghetti sauce mix, basil, parsley and salt.

Pour tomatoes, tomato sauce and 1 c. water over top making sure that all is moistened. Bring to boil, cover and simmer 35 minutes or until noodles are tender. Lay cheese over top and let stand about 5 minutes.
