Mom's Quick and Tasty Lasagna

Makes: 12 servings

Brown together until meat is cooked:

  • 1 lb. ground beef
  • 1 chopped onion

Add:

  • 2 jars (26 oz. each) favorite spaghetti sauce (homemade is good, too)
  • 1 can sliced mushrooms, drained
  • 1 T. Italian seasoning
  • 1 t. garlic salt
  • salt and pepper to taste

Boil 9 lasagna noodles until al dente.

In separate bowl, mix:

  • 1 container small curd cottage cheese
  • 1 c. grated Parmesan
  • 1 T. parsley flakes
  • 1 egg

To layer lasagna in well-greased 9x13-in. dish:

Spread 1/3 prepared sauce mixture in bottom of pan and place 3 noodles over sauce. Spread cottage cheese mixture over noodles and cover with 3 more noodles.

Ladle the second 1/3 sauce over noodles, sprinkle with 1 c. mozzarella cheese.

Place final 3 noodles on top and spread remaining sauce on top. Top with 3 c. mozzarella, or to taste.

Bake at 350ºF for 60-70 minutes.* Let stand 10 minutes before cutting.

*Note: You may need to place a sheet pan under it while baking and lay another over the top to keep cheese from browning too much.
