Mom's Easy Beef Enchiladas
Makes: 8-10 servings
- 2 lb. ground beef
- 1 med. onion, chopped
- 1 T. +/- chili powder
- salt and pepper to taste
- 8-10 large tortillas
- shredded cojack or cheddar cheese
- 1 large can enchilada sauce
Brown ground beef with onion. When cooked, drain well and add chili powder, and salt and pepper to taste (at this time you can add a little of the enchilada sauce if you desire). Spoon meat mixture into 8-10 large flour tortilla shells and sprinkle with cheese. Roll up each filled tortilla and place in a well-greased 9x13-in. or larger baking dish.
Pour over all, one large can of enchilada sauce, making sure to coat each flour shell. Sprinkle with more cheese, as desired, and bake at 350ºF for 45-60 minutes. They are done when heated through.
Serve with your favorite toppings. We enjoy: lettuce, tomatoes, onions, salsa, black olives, avocados, and sour cream.
Note:You may want to place a sheet pan upside down over the enchiladas to prevent the cheese from browning too much. If your baking pan in deep enough, you may cover with foil--make sure it is not touching the food.
