Lavonne's Party Chicken

Makes: 8 servings

  • 8 large boneless, skinless chicken breast halves
  • 8 slices bacon
  • 1 (4 oz) pkg. smoked dried beef, chopped
  • 1 (10-3/4 oz) can cream of mushroom soup
  • 1-1/2 c. sour cream

In a 9x13-in. baking dish, sprinkle chopped beef over the bottom. Roll up each chicken breast lengthwise, then wrap one slice of bacon around each breast and lay them on top of the beef. Mix together in another bowl the cream of mushroom soup and sour cream. Spoon this mixture over the breasts and bake at 275ºF for 3 hours, uncovered (or 1 hour at 350ºF). This should take on a lightly brown color.
