Garden Pork Stir-Fry

- 1 lb. boneless pork loins, cut into 3/4-in. cubes
- 2 c. zucchini, julienned
- 1/2 lb. fresh mushrooms, sliced
- 1 med. onion, cut into wedges
- 1 c. green peppers, julienned
- 1 T. cornstarch
- 3 T. light soy sauce
- 1 T. cold water
- 1/4 t. garlic powder
- hot cooked rice
In a skillet, stir-fry the pork until on longer pink, about 4 minutes on each side. Add zucchini, mushrooms, onion and green pepper, stir-fry for 3 minutes or until crisp-tender. In a small bowl, combine corn starch, soy sauce, water and garlic powder until smooth. Add to the skillet. Bring to a boil; cook and stir for 1-2 minutes or until thickened and bubbly. Serve over rice.
