Garden Pork Stir-Fry

Makes: 6 servings

  • 1 lb. boneless pork loins, cut into 3/4-in. cubes
  • 2 c. zucchini, julienned
  • 1/2 lb. fresh mushrooms, sliced
  • 1 med. onion, cut into wedges
  • 1 c. green peppers, julienned
  • 1 T. cornstarch
  • 3 T. light soy sauce
  • 1 T. cold water
  • 1/4 t. garlic powder
  • hot cooked rice

In a skillet, stir-fry the pork until on longer pink, about 4 minutes on each side. Add zucchini, mushrooms, onion and green pepper, stir-fry for 3 minutes or until crisp-tender. In a small bowl, combine corn starch, soy sauce, water and garlic powder until smooth. Add to the skillet. Bring to a boil; cook and stir for 1-2 minutes or until thickened and bubbly. Serve over rice.
