Tomato Relish

Makes: 4-5 pints

Peel and chop up 3 qt. tomatoes. Sprinkle with 1 T. (scant) salt and let stand 1 hour.

Drain and add:

  • 2 c. chopped onions
  • 2 lg. green peppers, diced
  • 2 c. chopped celery
  • 1 T. ground cinnamon
  • 1/2 t. ground cloves
  • 1 T. mustard seed
  • 2-1/4 c. sugar
  • 1-1/2 c. vinegar

Bring to boil, stir often. Reduce heat and simmer until sauce is thick and desired consistency. Put into hot jars and seal.
