Frozen Tomato Sauce

  • 20 lg. tomatoes, washed, cored and cut into lg. chunks
  • 4 lg. onions, cut into chunks (about 4 c.)
  • 4 lg. carrots, shredded
  • 4 ribs celery, chopped
  • 4 lg. green peppers
  • 1/2 c. chopped fresh parsley
  • 3 T. sugar
  • 2 T. salt
  • 3/4 t. pepper

Bring to boil and stir frequently (DO NOT scorch). Simmer 30 minutes or until thick. Cool slightly. Ladle into blender and cover. Blend on high. Pour into freezer containers and freeze.
