Chunky Tomato Ketchup

- 8 c. tomatoes, peeled and cut up
- 2 c. sugar
- 2 medium onions,chopped
- 2 T. salt
- 2-6oz. cans tomato paste
- 1/2 c. white vinegar
In a large saucepan, combine tomatoes, onions, sugar, tomato paste and salt; bring to a boil. Reduce heat; simmer uncovered for 1-1/2 hours or until slightly thickened. Stir in vinegar; heat through. Ladle hot mixture into hot jars, leaving 1/4 inch headway. Adjust caps. Process for 20 minutes in a hot water bath.
Note: You can cut the sugar down to 1/4 cup. When you do this, the ketchup tastes like tomatoes instead of sugar. Also, you can make it smooth by putting it through a strainer (we have a Kitchen Aid), but put the tomato paste in after doing so. You may add peppers, if desired.
