Christmas Red Pickles

- 1 gal. cucumbers, peeled, and sliced or chunked
- 1 c. lime
- 1 t. alum
- 1 t. red food coloring
- 1 c. vinegar
Syrup:
- 2 c. vinegar
- 2 c. water
- 7 c. sugar
- 1 c. cinnamon red-hots
- 4 sticks cinnamon
Add lime to 1 gallon of cucumbers. Add water to cover and let set for 24 hours. Rinse cucumbers and let stand for 3 hours in cold water. Mix food coloring, alum, vinegar plus enough water to cover the cucumbers. Simmer for 2 hours; then pour off liquid.
While they are simmering make syrup by mixing all syrup ingredients. Heat until red-hots are dissolved. Pour over cucumbers, which have been drained, let stand overnight. The next morning, heat mixture and put into jars; seal in water bath for 15 minutes.
