Sausage Egg Subs

Makes: 6 servings

  • 1 1/4 lb. bulk pork sausage
  • 1/4 c. onion, chopped
  • 12 eggs, lightly beaten
  • 1/2 c. fresh mushrooms, chopped
  • 1-2 T. green peppers, finely chopped
  • 1-2 T. sweet red pepper, finely chopped
  • 6 submarine sandwich buns (6-in.), split

Brown sausage with onion. Drain. Saute mushrooms and peppers in a separate pan while scrambling eggs. Then mix with sausage. Place on sandwich buns and serve.
