Sausage Egg Subs

- 1 1/4 lb. bulk pork sausage
- 1/4 c. onion, chopped
- 12 eggs, lightly beaten
- 1/2 c. fresh mushrooms, chopped
- 1-2 T. green peppers, finely chopped
- 1-2 T. sweet red pepper, finely chopped
- 6 submarine sandwich buns (6-in.), split
Brown sausage with onion. Drain. Saute mushrooms and peppers in a separate pan while scrambling eggs. Then mix with sausage. Place on sandwich buns and serve.
