Maple Pecan Granola

- 8 c. rolled oats
- 1 c. pecans
- 1 t. salt
- 1 c. olive oil
- 1 t. vanilla
- 1 c. maple syrup
In a large bowl, mix the oats, pecans, and salt. In a small bowl, mix the oil, vanilla, and maple syrup very well! Then pour the liquid mixture into the dry mixture and mix everything together. Put the granola on two cookie sheets. Bake at 300ºF, for 20 minutes. Take it out of the oven, and, being careful, stir. Then bake at 225ºF for 1 hour. Stir. Bake for another hour at same temperature. Let it cool for a while.
We store the granola in glass gallon-sized jars, but I'm sure anything that is air-tight would work.
