Bacon and Egg Sandwiches

Makes: 4 Sandwiches

  • 6 hard boiled eggs, cooled, peeled, and sliced
  • 1/2 lb. of bacon slices, cooked
  • butter
  • salt and pepper
  • 8 slices of homemade bread

For each sandwich, take two slices of bread. Butter each slice on one side only. Layer egg slices on top of buttered bread. Add salt and pepper to taste. Next, top the egg slices with cooked bacon. Top with the other slice of buttered bread, butter side down facing the bacon. Cut into 4 wedges and serve with fresh sliced veggies and fresh fruit.
