Pumpkin Squares

Makes: 12-16 servings

  • 1 c. flour
  • 1/2 c. rolled oats
  • 1/2 c. brown sugar
  • 1/2 c. butter, melted

Combine and press into bottom of a greased 9x13" baking dish. Bake at 350ºF for 15 minutes. Remove from oven.

  • 1 (14 oz) can evaporated milk
  • 2 c. pumpkin
  • 2 eggs
  • 3/4 c. sugar
  • 1/2 t. salt
  • 1/2 t. ground ginger
  • 1 t. cinnamon
  • 1/4 t. ground cloves

Blend well; pour onto prepared crust. Bake for 15 minutes at 350ºF.

While baking, combine:

  • 1/2 c. pecans, chopped
  • 1/2 c. brown sugar
  • 2 T. butter, melted

Remove dessert from oven after 15 minutes. Sprinkle topping over all. Bake an additional 30 minutes.

Serve with Cool Whip or whipped cream.
