Pumpkin Roll

Cake:
- 3 eggs
- 1 c. sugar
- 2/3 c. pumpkin
- 1 t. lemon juice, optional
- 3/4 c. flour
- 1 t. baking powder
- 2 t. cinnamon
- 1 t. ginger
- 1/2 t. nutmeg
- 1/2 t. salt
Filling:
- 1 c. powdered sugar
- 1 (8 oz.) package cream cheese
- 4 T. butter
- 1/2 t. vanilla
Preheat oven to 350ºF. Grease a 10x15-in. pan. Place waxed paper in the pan and grease the waxed paper. Beat eggs, sugar, pumpkin, and lemon juice for 5 minutes. In a separate bowl, mix the rest of the cake ingredients. Combine with pumpkin mixture and spread in pan. Bake for 15 minutes. Turn onto powdered sugered towel and roll up, starting at narrow end. Cool and unroll. Spread filling on cake. Re-roll and chill.
Note: You can also use 3 teaspoons pumpkin pie spice in place of the cinnamon, nutmeg, and ginger.
