Pumpkin Pie

- 2 unbaked pastry shells
- 1 large can pumpkin
- 6 eggs, slightly beaten
- 2 c. granulated sugar or light brown sugar
- 1 t. salt
- 2 t. cinnamon
- 1/2 t. cloves
- 1/2 t. nutmeg
- 1/2 t. ginger
- 2 c. milk or evaporated milk
Combine eggs, sugar, salt and spices and beat well. Blend in pumpkin. Add milk and beat well. Turn into pastry lined pie pan. Bake in a hot oven (450ºF) for 10 minutes. Reduce heat to 350ºF and continue baking until pie is done. Pie is done when knife, inserted in center, comes out clean.
