Old-Fashioned Butterscotch Pudding

- 3/4 c. brown sugar
- 1/4 c. white sugar
- 1 egg
- 2 T. butter
- 1-1/2 T. flour
- 2 c. milk
Melt together butter and brown sugar. Add 1/2 cup boiling water to dissolve the caramel mixture (you may need to cook this mixture to break it up). Mix white sugar, beaten egg, flour, and milk. Add to caramel mixture and cook until thick, stirring constantly. Bring to a boil. Add whipped cream and/or bananas, if desired.
Note: This recipe can also be put into a baked pie shell and served as a pie.
