Old World Raspberry Bars

  • 2-1/4 c. flour
  • 1 c. sugar
  • 1 c. softened butter
  • 1 egg
  • 3/4 c. raspberry preserves
  • 1 c. chopped pecans, optional

In a large bowl, combine all ingredients except raspberry preserves. Beat at low speed until well mixed. Reserve 1-1/2 c. mixture and set aside. Press remaining mixture on bottom of greased 8-in. square baking pan. Spread preserves to within 1/2-in. from edge. Crumble reserved mixture over preserves and bake for 40-50 minutes, or until lightly brown at 350ºF degrees. Cool completely and then cut into bars.
