Oatmeal Chocolate Chip Cake (or Raisin Bars)

Makes: approx. 20 servings

  • 1-3/4 c. boiling water
  • 1 c. rolled oats
  • 1-1/3 c. of honey
  • 1/2 c. of oil
  • 2 eggs
  • 2 c. spelt or whole wheat pastry flour
  • 1 t. baking soda
  • 1/2 t. salt
  • 1 T. cocoa powder
  • 1 c. chocolate chips (or raisins, if making raisin bars)
  • 1/2 c. pecans, optional

Pour boiling water over oats and let stand in room temperature for 10-30 minutes.

Add honey and oil. Beat in eggs.

Combine all dry ingredients and mix into oat mixture.

Pour batter into an oiled 9x13-in. pan. Sprinkle raisins or pecans and chips (if using) on the top. Bake at 325ºF for about 30-40 minutes or until done.
