Oatmeal Cake
Makes: 9x13-in. pan
Mix and let stand:
- 1 c. oatmeal
- 1-1/2 c. boiling water
Mix well and add to oatmeal mixture:
- 1 c. brown sugar
- 1 c. white sugar
- 1/2 c. melted butter
- 2 eggs
Mix well and add to above:
- 1 t. cinnamon
- 1-1/2 c. flour
- 1 t. baking soda
- 1/2 t. salt
Add 1/2 c. raisins, if desired. Bake at 350ºF for 35 minutes in a greased or oiled 9x13-in. pan.
Note: This is a very thin batter, but it rises nicely.
Topping
- 1 c. brown sugar
- 1/2 c. melted butter
- 1 c. coconut
- 1 t. vanilla
- 1/4 c. milk
- 1/2 c. chopped walnuts
Mix well and spread over hot cake. Place under broiler until bubbly and brown (about 3 to 4 minutes; watch carefully!).
