Lemon Thyme Cookies

Makes: 4 dozen

  • 1 c. butter or margarine, softened
  • 1-1/2 c. granulated sugar
  • 2 eggs
  • 2-1/2 c. unbleached flour
  • 1 t. cream of tartar
  • 1/2 t. salt
  • 5 T. fresh lemon thyme, finely chopped, or 3 T. dried lemon thyme

Cream butter and sugar; add eggs and mix well. Sift together flour, cream of tartar, and salt. Stir flour mixture into butter mixture until well blended; add in thyme. Chill overnight or until firm enough to roll.

Preheat the oven to 350ºF. Roll the chilled dough into 1-inch balls and bake on a greased cookie sheet for 10 minutes.

Note: If lemon thyme is hard to find, you can use any of the other varieties of thyme.
