Coconut Date Balls

Makes: n/a

  • 1/2 c. butter
  • 1/2 lb. (8 oz) chopped dates
  • 2 eggs, beaten

Melt dates in butter over low heat. Stir in eggs and boil for 2 minutes.

Remove from heat and add:

  • 1-1/2 c. rice krispies
  • 1/2 c. chopped nuts
  • 1 t. vanilla
  • unsweetened coconut

Cool slightly. Shape into balls and roll in coconut, rice krispies, or chopped nuts.
