Tamale Pie
Makes: 6 servings- 1 lb. gound beef
- 1/2 lb. bulk pork sausage
- 1/4 c. chopped onion
- 1 garlic clove, minced
- 1 can (14-1/2 oz) stewed tomatoes, drained
- 1 can (11 oz) whole kernel corn, drained
- 1 can (6 oz) tomato paste
- 1/2 c. sliced ripe olives
- 1-1/2 t. chill powder
- 1/2 t. salt
- 1 egg
- 1/3 c. milk
- 1 pkg. (8-1/2 oz) corn bread/muffin mix
- paprika
- 1/2 c. shredded cheddar cheese
In a 2-1/2 qt. casserole dish. Combine cooked/sauteed beef, sausage, onion and garlic. Layer in casserole. Mix together: stewed tomatoes, corn, tomato paste, chili powder and salt. Spread on top of meat mixture.
In a bowl, beat egg. Add milk and corn bread mix. Stir just until moistened. Spoon over meat mixture; sprinkle with paprika.
Bake at 350ºF for 45 minutes or until cooked and tests done with a toothpick.
