Santa Fe Enchiladas

- 1 lb. lean ground beef
- 1 med. chopped onion, optional
- 1 can (12 oz) tomato paste
- 1 c. water
- 1 envelope taco seasoning
- 10 flour tortillas (6-in.)
- 1 jar (8 oz) processed cheese sauce
- 1 can (4 oz) chopped green chilies, drained
Brown beef and onions; drain. Stir in tomato paste, water and taco seasoning. Cover and cook on high for 3-4 minutes or until heated through, stirring once. Spoon about 1/3 c. meat mixture down the center of each tortilla; roll up tightly. Set tortilla seam-side down in a greased 2-1/2 qt. baking dish. Combine cheese sauce and chilies in a double broiler. Cook until heated through. Pour over torillas and bake at 350ºF until bubbly in the center. Let stand 5 minutes before serving.
