Mom's Chicken Pot Pie

Makes: 9-in. dish

Simmer one large chicken breast in:

  • 2 c. water
  • 1/2 t. poultry seasoning
  • 1 t. chicken boullion
  • salt and pepper, to taste

Simmer until cooked. Removed chicken and cool--cut into bite-sized pieces. Into chicken broth, add two peeled and cubed potatoes, 1-1/2 c. frozen mixed vegetables, and the cubed chicken. Cook until potatoes are tender crisp.

When potatoes are done, add: 1 c. milk and 1/4 c. flour, blended well. Stir until thickened. Pour into prepared 9" pie crust. Add 1/4 c. stick melted butter to 1 c. crushed cracker crumbs. Mix well, sprinkle over pie filling. Bake at 350ºF for one hour.
