Hash Brown Potato Pie

- 5 large eggs
- 1/2 c. milk
- 3 cups shredded hash browns, thawed
- 1/3 c. green onions, thinly sliced
- 1/2 t. hot pepper sauce
- 1-1/2 c. shredded sharp cheddar cheese
- 4 slices bacon, cooked crisp and crumbled
Preheat oven to 350ºF. Beat together eggs and milk in a medium bowl; stir in potatoes, green onions, salt, hot pepper sauce, shredded cheddar and bacon. Pour into greased 9-in. pie plate or quiche dish. Bake 25-30 minutes or until center is set.
Note: The recipe can be easily doubled and placed in a 9x13-in. baking dish. Allow 40-50 minutes to bake, or until the center has set.
