Busy Day Lasagna

Makes 12-15 servings

  • 1 lb. ground beef, browned (may substitute 2 c. fresh julienned carrots and/or zucchini)
  • 5 c. spaghetti sauce (your favorite brand)
  • 1 (20 oz) bag frozen cheese ravioli (you do not need to thaw)
  • 3-4 c. fresh spinach, chopped
  • 6 c. shredded mozzarella cheese
  • 1/2 c. grated parmesan/romano cheese

Brown hamburger, drain. Add spaghetti sauce and heat through. Spread 1/3 of the sauce into a greased 10-1/2x15-in. (or 4 qt.) casserole dish. Place 20 ravioli on top. Cover with the spinach and half the mozzarella (press down to make room for remaining layers). Add another layer of ravioli and the remaining sauce, mozzarella, and the parmesan.

Cover with foil and bake for about 50 minutes. Uncover and bake an additional 5-10 minutes, or until heated through.
