Sweet Potato Scones

Makes: 8-10 servings
  • 2 c. whole wheat flour
  • 3 T. brown sugar
  • 2 t. baking powder
  • 1/2 t. baking soda
  • 1/2 t. salt
  • 1/4 c. butter, melted
  • 1/2 c. mashed cooked sweet potatoes
  • 1/2 c. sour cream
  • 1 egg yolk

Preheat oven to 375ºF. Grease a baking sheet and set aside. Mix dry ingredients in one bowl and wet ingredients in another. Mix the wet and dry ingredients together to form a soft dough. Turn out onto floured surface. Roll or pat out to make a round about 1/2 inch thick. Cut into 8-10 pie shaped wedges and place on baking sheet 1 to 1-1/2 inches apart. Brush tops with egg white. Bake about 20 minutes or until light brown. Split and serve warm with butter and honey.
