Pumpkin-Raisin Muffins

Makes: 12 muffins or one loaf of bread

  • 1 c. pumpkin
  • 4 eggs
  • 1 t. vanilla
  • 1/2 c. raisins
  • 1-1/2 c. dry milk
  • 1 c. whole-wheat flour
  • 1/4 c. plus 1 T. sugar
  • 1 t. baking powder
  • 1 t. baking soda
  • 1 t. cinnamon
  • 1/2 t. cloves
  • 1/8-1/4 t. all spice
  • 1/8-1/4 t. nutmeg
  • grated carrots, optional

In a bowl, mix wet ingredients and raisins together. In a separate bowl, mix together dry ingredients. Add dry ingredients to wet ingredients, just until mixed. Bake at 350ºF for 20-25 minutes.
