Popeye's Biscuits

- 4 c. Buttermilk Biscuit Mix
- 8 oz. sour cream
- 1 (1/4 c.) stick butter, melted
- 1/4 c. club soda, more or less
- 1 (1/4 c.) stick butter
Mix all ingredients together, except last stick of butter. Add more club soda if needed to make dough. Roll out as thick as you like and cut with biscuit cutter. Place each biscuit into buttered biscuit pan. Top each biscuit with slices of the last stick of butter. Bake at 450ºF for 25 minutes or until brown. Take out of oven and top each biscuit with more slices of butter. Serve with Chicken Pot Pie.
