Orange-Apricot Loaf

- 1 c. apricots, diced
- 2 c. all-purpose flour
- 3/4 c. granulated sugar
- 1 T. baking powder
- 1/4 t. salt
- 2 eggs
- 2/3 c. orange juice
- 3 T. vegetable oil
Preheat oven to 350ºF. In a large bowl, stir together flour, sugar, baking powder, and salt. In a smaller bowl, combine eggs, orange juice, and oil. Add to the flour mixture and stir just until combined. Fold in the apricots. Spoon into a lightly greased 8x4x2-in. loaf pan. Bake for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool the bread in pan on a wire rack for 5 minutes; remove from pan.
