Nature's Own Dinner Bread

- 3-3/4 - 4-1/4 c. unsifted white flour
- 1/2 c. cornmeal
- 1/2 unsifted rye flour
- 3/4 c. milk
- 1/4 c. sugar
- 4 t. salt
- 1/4 c. margarine
- 1-1/2 warm water
- 2 pkg. yeast
- 1 c. wheat germ
- (1 egg white slightly beaten with 1 T. water)
Combine 2 c. white flour, 1/2 c. cornmeal, wheat and rye flours. Set aside. Scald milk; stir in sugar, salt, and margarine, cool to lukewarm. Put warm water in a warm large bowl. Dissolve yeast in it. Add lukewarm milk and flour mixtures, beat until smooth. Add wheat germ and enough additional white flour to make a stiff dough. Knead for 8-10 min. Place in greased bowl, turn over and let rise (1 hour and 15 minutes). Punch down, divide into 4 balls on greased cookie sheet. Sprinkle with cornmeal and let rise until double.
Bake in a preheated 400ºF oven for 10 minutes then brush tops with egg white and water mixture and return to oven to bake until done (above 5 more minutes).
Serve hot with butter and jam.
