Morning Glory Muffins

Makes: 10 servings

  • 2 c. apples
  • 1 c. carrots, grated
  • 1 c. zucchini
  • 1 c. honey (you can add 1/2 c. more if you have sweet tooth)
  • 2 eggs

Blend in:

  • 1/2 c. oil
  • 2 t. vanilla
  • 2 c. pastry flour
  • 2 t. baking soda

Combine:

  • 2 t. cinnamon
  • 1 c. raisins, or cranraisins

Bake at 325ºF for 20 minutes.

Substitutions: Instead of oil, you can use apple sauce. Instead of zucchini, you can use bananas. You can also add 1 cup of bran cereal to add more fiber.
