Morning Glory Muffins

- 2 c. apples
- 1 c. carrots, grated
- 1 c. zucchini
- 1 c. honey (you can add 1/2 c. more if you have sweet tooth)
- 2 eggs
Blend in:
- 1/2 c. oil
- 2 t. vanilla
- 2 c. pastry flour
- 2 t. baking soda
Combine:
- 2 t. cinnamon
- 1 c. raisins, or cranraisins
Bake at 325ºF for 20 minutes.
Substitutions: Instead of oil, you can use apple sauce. Instead of zucchini, you can use bananas. You can also add 1 cup of bran cereal to add more fiber.
