Buttermilk Biscuits

- 1/2 c. butter
- 2 c. all-purpose flour
- 1 t. sugar
- 2 t. baking powder
- 1/4 t. baking soda
- 1/2 t. salt
- 3/4 - 1 c. buttermilk
Preheat oven to 450ºF.
Cut shortening into flour, sugar, baking powder, and salt with a pastry blender until mixture resembles fine crumbs.
Stir in buttermilk until dough leaves sides of bowl (dough will be soft and sticky). Knead dough lightly 7 times. Roll or pat dough 1/2 in. thick and use a cookie cutter or the mouth of a cup to cut out the biscuits.
Place biscuits on an ungreased cookie sheet; leaving space between them. Bake 10-12 min. or until golden brown. Remove from sheet right away.
For a healthier buscuit:
Use spelt or wheat flour instead of all-purpose flour.
The sugar can be substituted for 3 heaping tablespoons of honey.
