Butter Muffins

Makes: 12 muffins

  • 2 cups flour
  • 1 egg
  • 1/2 cup sugar
  • 3/4 cup milk
  • 2 t. vanilla
  • 1/2 cup melted butter
  • 1/2 t. nutmeg
  • 1 T. baking powder
  • 3/4 t. salt

Preheat oven to 375ºF. Prepare muffin pans. In a bowl whisk together flour, sugar, powder, nutmeg and salt. In another bowl beat egg and then add milk; stir in vanilla. Add egg mixture to dry ingredients and stir with a fork until just combined. Stir in melted butter. Place 1/4 cup batter in every muffin cup. Bake for 25 minutes or until golden brown and firm.

Serve hot with butter or jam.
