Blender Pancakes
Submitted by: Anna BentleyMakes: 7 "normal"-sized pancakes
- 1-1/4 c. water
- 1/4 c. dry milk, optional
- 1 c. whole wheat berries
- 1 egg
- 2 T. butter or oil
- 1-2 T. honey
- 1/4-1/2 t. salt
- 1 T. baking powder
In blender, mix: water, wheat, and dry milk on high for 3 minutes. Add egg, butter, honey, and salt. Blend for 20 seconds. Add baking powder; pulse just enough to mix. Mixture should foam up high. Cook like you would any other pancake recipe.
Note: You can also substitute 1-1/4 c. milk for the water and dry milk; that's the way I make it.
"Recipe says 'also makes delicious waffles,' but I haven't tried it."
