Amber's Lemon Poppy Seed Muffins

Makes: 12 muffins

  • 1 1/2-1 3/4 c. flour (larger amount when using two eggs)
  • 3/4 t. salt
  • 1 t. baking powder
  • 1 c. sugar
  • 4 T. poppy seeds
  • 1-2 eggs
  • 2/3 c. oil
  • 3/4 c. liquid (1/2 milk, 1/2 lemon juice)
  • 3/4 t. almond extract, optional

Sift together dry ingredients. Mix in wet ingredients just until blended. Bake at 350ºF for 20 minutes or until it tests done with a toothpick. After they test done, allow to bake 2 more minutes to ensure that they come out of the muffin cups nicely.

Serve with warm soup, or for breakfast.
