Mom's Nacho Supreme Dip
Makes: 9x13" baking dish
- 1 large (or 2 small) can refried beans
- 1 lb. cooked ground beef, drain if necessary
- 1 green pepper, chopped
- 1 onion, chopped
- butter
- 1 can enchilada sauce
- shredded cheddar and/or mozzarella
Saute green pepper and onion in butter until onions are translucent. Set aside.
In a 9x13-in. baking dish, layer: refried beans, ground beef, sauteed green pepper and onion. Pour enchilada sauce over all.
Bake at 350ºF for 30-40 minutes, or until bubbly in the middle. About half way through spread cheese over top and place back in oven for remaining time.
Serve with diced tomatoes, lettuce, sour cream, black olives and corn chips.
